I am so obsessed with Pork Carnitas because they are incredibly versatile and ridiculously tasty. Tacos, Burritos, Quesadillas, Nachos and Enchiladas, to name a few obvious ones.
My favorite way to eat Pork Carnitas is eating it straight- I
picked at it constantly the whole time I
was taking photos :)
Everyone needs a staple recipe in their back pocket for Pork Carnitas.
Theis recipe is so easy, the ultimate "Set and Forget". Get it
right every time- this recipe is a no fail....
Grab about a 4 pound pork butt (bone in) at the market. Season well with salt all over.
Toss in a bit of olive oil into you slow cooker and sear the Pork on all sides on the stove top.
Slice up two limes and two oranges.
With a orange juicer squeeze the citrus on to the pork. Leave the
two oranges in the pot for more flavor.
Top with one sliced onion and two bay leaves, pour in 2 cups of water.
Sprinkle pork with
3/4 tsp pepper
1 tsp ground cumin
1small can of diced green chiles
Put a lid on it and set the time to 7 hours on low.
How easy was that?
Now forget about it and go do something fun.
When you get home you kitchen
will smell

Yes, my whole house smells Delicious!
Use a slotted spoon to remove the meat from the slow cooker and set aside.
Place the pot over high heat on the stove and boil until it
reduces about 20-30 minutes.
While the liquid is reducing, use two forks to pull the pork into bite size pieces.
Once the liquid has reduces, gently pour over the top. Taste and
add additional salt and pepper. What the heck
maybe you want yours spicy hot so
add some Hot Pepper Sauce.
