HEIRLOOM TOMATO GALETTE


Heirloom Tomato Galette it's is in essence, a perfect homage to summer, and it's
exactly what you need to be eating right now.

Even before my first bite, I simply knew I made something amazing 
and thats how this Galette felt to me.


The shining star in this recipe is without question, the Heirloom tomatoes.
Slice up about 4 tomatoes  in different shades of color.


In a small skillet combined 4 chopped shallots and 2 tsp EVOO. Saute
the shallots till they are lightly caramelize, then remove to cool.


Grab your store bought pastry dough on parchment...Or make your own :)
Crumble up 8 oz of your favorite goat cheese.


Top the dough with the goat cheese, leaving a roughly 2" border along the edges.


Drizzle about 2-3 tbsp of honey over the cheese.

Whether you go hard or just a light drizzle (go hard, trust me) the honey makes
the goat cheese creamier & sweeter, shallots syrupy. It's an 
all around- all star in this Galette.
Absolutely Don't Skip.


Evenly top with the caramelized shallots.


Next, liberally season sliced tomatoes with salt & pepper
before layering over goat cheese.


Heirlooms.


Generously drizzle additional EVOO over the tomatoes.


Then lastly about 2tbsp of fresh Thyme.


Fold the edges of the dough around the tomatoes.


 Give the good egg wash all around the dough with a brush 
that matches the Heirlooms.


Off to a preheated 375 degree oven for about 1 1/2 hours. It should be golden brown
and tomatoes have begun to char. Keep and eye on it.

From the second I folded up the dough's edges, I knew this recipe had to be shared.


Cool for 2-3 minutes before serving if you caaaaan?


Serve just like this because....
It's a Rustic Heirloom Tomato Galette.


The best way to use tomato surplus, Heirloom Tomato Galette with
Honeyed Goat Cheese, Caramelized Shallots and Fresh Thyme.
Tasty as it can get.
