PULLED PORK TACOS


Let's Taco 'Bout escaping the Rain & Snow and head "South Of The Border"
in our own kitchens. Pretend we are on vacation.
Eat Tacos and sip on several
Sangras or  Coronitas…


For the pulled : in a small bowl, mix together 2 teaspoons ground cumin, 
1/2 teaspoon ground coriander, 2 teaspoons salt and
1/2 teaspoon dried oregano.


Rub the spice mixture all over a two pound pork shoulder.


Heat 2 tablespoons of olive oil and brown roast on both side about 3 minutes.


Meanwhile, in a slow cooker, combine one chopped onion.


Several garlic cloves, smashed.


1 chipotle in adobo plus 1 teaspoon adobo sauce.


Pour in 1/2 cup of your favorite Mexican beer.


Go for it drink the rest :)


Squeeze into the pot juice of a half an orange


Zest of one orange.


Add the browned roast along with any pan juices into the slower cooker.


Cover and cook on low for 8 hours or high for 6 hours.


When to pork is done pull it out of the pot.


Shred the tender pork with two forks.


Add the shredded meat back to the slow cooker and toss with onions
and cooking juices. Keeping warm till you are ready
to build your Tacos.


Taco Garnish Ready..

Radishes
Cabbage
Cilantro
Sour Cream
Crumbled Feta cheese
Tomatoes
Avocado


Bring the Pulled Pork to the table please!

Grab a flour or corn tortilla… I prefer flour.

Turn on some Mexican music and forget about 
the Rain & Snow because your on
a Vacation..kinda :)
