TURKEY CACCIATORE SOUP


Thoughts For Leftover Turkey…

It was a bit of a frigid weekend in Marin after Thanksgiving. I opted to skip the Turkey Sandwich between two proper pieces of white bread with mayonnaise and made a pot of soup with my left
over turkey. Definitely comfort food and a change up from Turkey Noodle Soup,


Love leftover Turkey and there are so many ways to use it.


Chop up one onion, red pepper, yellow pepper, bunch of carrots and 8 oz of mushroom.


Toss all the vegetables into a large Dutch Oven.


Chop up 4 garlic cloves and toss into the pot.


Pour in some olive oil.


Salt & Pepper and assorted herbs ( parsley, basil, oregano, thyme) 
into the pot and sautéed for about 8 minutes.


Pour in 2 cans of crushed fire roasted tomatoes.


Two cups of turkey or chicken broth.


Yes I know you will want to drink this glass of white wine but…
pour it into the pot and fill the glass up again
for you :)


Slice up your leftover dark and white turkey meat
into bite size pieces.


The Turkey Joins The Party In The Pot :)


Chop up a handful of pitted Kalamata olive.


Olives welcome to the party. Drop in a few sage leaves or bay leaves.


Bring the soup to a boil. Turn heat down and simmer for about half hour.


Smells so amazing!


Grab a ladle and dig in.


Add a little parmesan cheese on top. 
Red Wine & White Wine is so right with
 Turkey Cacciatore Soup!
