HOMEMADE FIG CRUMB BARS


Fig season is a short season so don't waste any time just making "Fig Preserves". 
The word that comes to me in every bite of these Fig Bars is...
Delicious!


First you will need 2 pounds of Figs.


Give the figs a good rinse.


There are three parts to making Fig Bars (fig jam, the crust, crumb topping).
Preheat the oven to 350 degrees and start chopping up the figs.



For fig jam toss your figs into a pot with 1/4 cup of sugar.


Stir fig mixture on medium heat for about 15 to 20 minutes then add lemon zest.


Add the juice of one lemon. Remove from heat and set aside.


Now for the pastry crust grab your food processor and; combined 1 1/2 cups of flour, 1/4 cup brown sugar, 1/2 teaspoon of salt, 1/2 teaspoon of baking powder and 1 egg yolk.



1 teaspoon of vanilla.


One stick of chilled and cubed butter. Pulse away till all combined and set aside.


To make crumb topping; combined 1/2 cup of pecans and 1/2 cup of the prepared pastry dough.


Add in 2 table spoons of brown sugar and mix well with a folk.


Grab a 8x8 baking dish and line it with parchment paper. (make sure it's overhanging for easy removal of bars after baking. Press remaining pasty crust onto the bottom of the baking dish
and bake crust for 15 to 20 minutes.


Remove crust from the oven and pour fig jam evenly over the crust.


Sprinkle crumb topping on the jam layer. Return to oven and continue baking
for an additional 20 minutes. Your kitchen will soon smell amazing.


I know how to clean this pot. Yumoooo!


 So ready for a bite!!!!


Let the bars cool and look how easy the bars lifted out of the baking dish.


Make cutting easy and use a pizza cutter.

Plate…


and Eat :)
