GARDEN ZUCCHINI LASAGNA


The zucchini from my garden are crazy huge! So why not substitute those noodles with zucchini
in my Lasagna. Be warned, this is not a light vegan Lasagna. This is hearty, cheesy and meaty dish that is so Yummy!



 Go run and grab some zucchini :)


I am sure some of you might object to the idea of zucchini used as noodles, but when you bite into this Lasagna, the texture of the zucchini paired with the ooey gooey cheese and spicy sausage
you will be singing a different tune!


Start by cutting the zucchini in half.


With your Mandoline start slicing away strips of zucchini.


Finished with the slicing.


Place the zucchini slices on a baking sheet and drizzle with olive oil, salt and pepper.
Bake in a 350 degree oven for about 8 minutes till a little tender.


Saute one large scallion in a dutch oven.


Add in 1 pound of spicy hot Italian Sausage and 1 pound of ground beef to the pot.


Once the meat is completely cooked pour in your favorite Marinara Sauce or by all
 means pour your homemade sauce into the dutch oven. Cook the meat mixture
on the stove top for about 10 minutes on low heat.


I love a little kick so a dash of red paper flakes, salt and pepper.


For the oozy gooey cheese part to this dish. In a bowl mix 1/2 cup grated Parmesan Cheese and
1 1/2 cups shredded Mozzarella cheese together.


Crack in one egg into the cheese mix.


Yes, more cheese please. Add in 1 cup of cottage cheese.


 Lets assemble the Zucchini Lasagna.


Layer in a casserole pan about 1-in Marinara Sauce.


Next layer in zucchini slices…Not noodles :)


Ooey Gooey Cheese is next.


Repeat layering being sure to end with cheese on top. Cover the dish with foil
and bake for 30 minutes, or until cheese is melted and
Lasagna is heated through.


There may be Marinara Sauce left over. If so, refrigerate for later use. But in my case,
it's for John to just eat like it was a bowl of Chile…


This really smells terrific. It's a "must" to let the dish rest just a few minutes
or it will be waaaay to hard to cut nice slices.


If you combine Wine & Dinner the new word is...
"Winner"


John you pour and I will slice.


One for me


and one for John.


Have a bite but the wine is all mine!


This dish is great because you will have leftovers for later. (middle of the night perhaps)

P.S. Garden Zucchini Lasagna can also be popped into your freezer.
