BACON JAM


Bacon Jam, oh my! This Bacon Jam recipe is right up there with one of THE BEST
things I've ever eaten. Well hello it has "Bacon" in it. So sweet, salty and savory.
Spread it on sandwitches or crostini or just spread it on Everything.
So versatile, and best just slightly warmed up.


Grab 2 pounds of bacon and chop it up.


Cook the bacon in your large dutch oven on medium heat for about
15-20 minutes until bacon starts to get crispy and fat is foaming.


Drain bacon using a colander placed over a bowl. Save the drained fat.


Dice up two large yellow onions.


Add 2 tsp of bacon fat and 2 tsp of butter to the pot and return to medium heat.


Add in onion and 1 tsp of salt.


Saute for about 10 minutes, stirring frequently.


While the onions sauté, add cooled bacon to a cutting board, and 
run through with a chef's knife to reduce the size even further.


To the onion mixture add 1/4 cup of brown sugar, 1/4 cup apple cider vinegar, 1 tsp dried thyme, 1 tsp black pepper and 1 pinch of caynne pepper.


Add bacon back to the pot and stir.


OMG…Give me a Spoon now! Add 1/2 cup of water cook for about 10-15
minutes until mixture is "brick-brow" in color and thick.
Add in 2 tsp of balsamic vinegar and 
2 tsp olive oil and stir well.
Have a taste NOW!


There ya have it "Bacon Jam". 


I packaged my Jam in small mason jars to use as a few hostess gifts for friends.


One of these jars will be staying at The Herr's house for sure. YUM.

  1. Do you store Bacon Jam in the refrig or hot water bath seal it? So addicted to those darn potato stacks...now the bacon jam may be next!
