Let's grow our "Flower" first. I just grabbed my flower cookie cutters and store bought
puff pastry sheets. Cut & Cooked away…Look what bloomed in my oven :)
Now for the soup…
Combined in your blender your diced cucumber & beets.
Next pour in chicken stock, yogurt, lemon juice, sugar and salt.
And blend a few seconds. This looks like a strawberry soup to me right?

This is such a yummy soup and little center in
my flower is just a beet.
INGREDIENTS
2 medium beets, boiled, peeled, and cut into cubes
1/2 cup diced cucumber, seed removed
1 cup chicken stock
1/2 cup plain greek yogurt
1 tablespoon freshly squeezed lemon juice
2 tablespoons sugar
salt and pepper
chopped fresh dill for garnish
