STRAWBERRIES AND CREAM BARS

Well it's Memorial Day weekend and I have a fabulous make ahead dessert for your BBQ fun.  Strawberries and Cream Bars are super thick yummy sugar cookies  that are topped with white

chocolate cream cheese frosting and strawberries. We spent Mothers Day weekend with

family and friends out at Stinson Beach. I made this dessert at home two days

ahead and just took it to the beach to serve at our Mothers Day Brunch.

Wait till you see what I did not cook on 

Mothers Day!

For the bars. Preheat the oven to 350 degrees F. In a bowl mix together 1 cup of

salted butter, 1 cup granulated sugar and 1 teaspoon vanilla extract.

Add in 2 cups all-purpose flour and mix together until dough just comes together.

Grab your 7x11 baking dish and line it with parchment paper and coat lightly with cooking spray.

Press you dough into the prepared pan and bake for 30 minutes or

until edges are slightly golden brown.

For the topping of the bars you will need 1 cup of you favorite white chocolate chips.

Melt the white chocolate chips over a double boiler.

Beat 8 ounces of cream cheese that is room temperature and then slowly 

beat in the melted chocolate. Mix until smooth and incorporated.

Here we go, spread all that cream on top now!

Well of course lick the bowl but we still have a little more work to do :)

Grab your "Monogram Cutting Board"(just kidding, he he)

and slice up about 1 1/2 cups of strawberries for the top.

Ok, giving myself a round of applause right now.

Cover and pop the Strawberries And Cream Bars in the refrigerator until your

ready to serve dessert. I made this on a Friday and served it on a Sunday.

Strawberries and Cream Cheese Bars were perfect ocean side for some special moms.

While your at the beach ride your cool bike to other beach parties...

and have Paella Del Rey cook for you on Mothers Day for your family 

and friends. They are fabulous!
