If you have an abundance of lemons growing in your yard then
you can have this yummy Lemon Loaf all summer.
This is where my apron comes in handy.
Lets just start off and talk about how adorable my citrus loaf pan is first.
Preheat oven to 350 degrees. Spray your 9x5- inch loaf pan with floured cooking spray and set aside.
In a large bowl, add eggs, sugar, sour cream and whisk vigorously until smooth and combined.
Drizzle in the oil while whisking to combine. Add the lemon zest, lemon extract, and whisk again.
Add the flour, baking powder, salt, and stir until just combined, don't over mix.
Some lumps will present and that's okay, don't try to stir them smooth.
Grab you cute Citrus Loaf Pan and if you don't have one
run out and buy one…Just kidding
any loaf pan works.
Turn the batter out into the prepared pan, smoothing the top lightly with a green spatula…
Just kidding any color works. Haaaaa. Bake for about 50 to 52 minutes or until top is domed,
set and, toothpick inserted in the center crack comes out clean. Off to the oven now.
I think I know what to do here…Taste
Allow the loaf to cool in pan for at least 30 minutes and whip up some glaze.
Grab you confectioner's sugar and lemons.
Combined juice and sugar and whisk until smooth and combined. Go ahead and
play with the sugar and lemon juice amounts a bit as necessary for desired consistency and flavor.
Evenly drizzle glaze over the bread or paint it on.
Top with a little powder sugar before slicing and serving too.
Well shall we save this for later or have a slice…Hmmmm
Lets have some. Extra glaze can be spread on the cut surface of the bread like
you'd spread butter on toast and it soaks right in making
the bread even moister and lemony.
INGREDIENTS
THE LOAF
3 large eggs
1 cup granulated sugar
1 cup (8 ounces) sour cream
1/2 cup canola oil
2 tablespoons lemon zest
1 to 2 tablespoons lemon extract, to taste
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
LEMON GLAZE
1 cup confectioner's sugar
3 tablespoons lemon juice, or as necessary for consistency
