First of all lets clear things up. You have to love peas to love this dip.
My husband "Hates" peas as much as I "Love" peas. This
creamy dip on crunchy bread is super satisfying
and so Spring Like.
Add the peas to a large pot of well-salted boiling water. Boil the peas
for about 30 seconds. Remove the peas to an ice bath and then drain them.
In the food processor, combine the ricotta, parmesan and mint.
Pulse just until the mixture comes together.
Add your lemon zest.
Tumble in those peas because thats what this dip is all about.
Pulse and scrap the sides.
Pulse just until mixture comes together; you want to keep a
little texture and not make it totally smooth.
Season with salt and pepper.
Drizzle with olive oil and garnish with a few peas so everyone knows
what we are talking about. Serve the pea dip with grilled
bread and maybe top with a radish.
INGREDIENTS
2 cups fresh or frozen peas
Kosher salt
Grated zest of 1/2 lemon
2 tablespoon chopped mint
Fresh ground pepper
2 tablespoons extra-virgin olive oil
1 cup fresh ricotta cheese
1/2 cup grated parmesan cheese
Grilled bread, for serving
