IRISH POTATO PIE



Irish Potato Pie is absolutely delicious and decadent and I will not apologize 
for this recipe because we are talking St. Patricks Day entertaining.
If you love scalloped potatoes, corn beef, cheese and pie crust
You will love this dish as much as I do.


Place 1 onion, peeled and thinly sliced into your cast iron skillet and cook over medium heat.


Chop up about a cup of your left over corned beef you cooked for dinner the other night.


Toss corned beef in with the onions and just warm up.


Thinly slice your potatoes with a mandolin.


The mandolin makes such perfect thin slices super fast.


Toss the slice potatoes into the skillet and drop in your dill. Salt and paper to taste.


Now add in your cream. Gently stir 3-5 minutes to mix the onions and potatoes
to coat everything in the fat. Yaaaa, I did say fat (Cream & Butter).
The potatoes don't need to be cooked through.


Place your thawed puff pastry in a 8-9 inch tart pan and crimp the edges. 


Spoon the mixture into the tart pan.


Pop this lovely tart into a 350 degree oven for about 35-45 minutes on
the lower rack, until the potatoes are fork-tender and the crust is golden.


About ten minutes before pie is done pull it out and sprinkle
some cheese over the top and pop it back into the oven.


Of course use "Irish Cheese"!!!


Smells soooooo good. But let it rest before you cut.


Garnish with some chives and by all means get The Guinness :)


Oh snap, my tart pan came off perfect. 


Seriously I can't wait to bite into this pie. Every ingredient
in this Irish Potato Pie is on my "yes" list. Feel
free to use Bacon too.

INGREDIENTS

1 sheet frozen puff pastry, thawed
4tb butter
1 cup of cooked corn beef
5 potato peeled and sliced thin
1Tb fresh dill
1/2 cup heavy cream
Salt and Pepper to taste
Chives for garnish
1/2 shredded Irish Cheese.
