Baileys's Irish Cream & Coffee Fudge is a terrific treat to eat and share on St. Patricks Day.
First things first. Head to your bar cart to make sure you have The Bailey's
Mix together The Bailey's and cold coffee in the microwave and heat for about 20 seconds.
On the stove top, combine the butter, sugar, and marshmallow cream until well mixed and smooth.
Slowly stir in the Bailey's Irish Cream mixture and mix well. Continue to cook after
it boils for five minutes, stirring the whole time, so it does not stick.
Stir in vanilla.
Tumble in the butterscotch chips and stir till they are all melted.
Perfect.
Place aluminum foil in the bottom and up the sides of a 9 x 13 inch dish.
It will make it much easier to get the fudge out later. Pour your fudge into prepared pan. Place in the fridge until it sets up.
No problem I can clean this. "Wink"!

fudge into several different sizes because it looks more home made.

INGREDIENTS
3/4 cup of butter
3 cups of granulated sugar
2/3 cup of evaporated milk
1/3 cup of Bailey's Irish Cream
3Tbsp cold coffee
1 pkg of butterscotch chips
1tsp pure vanilla extract
