Who has not been Inspired by Julia Child...
I ran across this children's "Little Golden Book" at
The Culinary Institute Of America at Greystone in St. Helena.
Of course I bought one for my granddaughter Betty and
of course it inspired me to whip up Julia Child's
Famous Roast Chicken!
This Is a Dreamy Delicious Classic One Pot Casserole Dish.
First Things First...
Put A Vintage Apron On!
You will need a Chicken, Mixed Vegetables, Wine, Spices and BUTTER.
This Chicken is 4 lbs.
Butter up this Chicken inside, outside and around the town side WELL.
Lots of Salt & Pepper inside and outside.
Julia Child is watching me back there... LOL
Grab your BIG Yellow Cast Iron Pot with a lid.
Heat olive oil over medium heat.
Brown the chicken lightly on all 3 sides, about 15 minutes.
Remove the chicken from the pot and fill the
the cavity with a half Onion & Rosemary.
Tie this Chickens legs together.
Chop up some Thyme, Rosemary and Tarragon.
Add in lots of BUTTER to the pot then add in your
Potatoes
Carrots
Onions
Butternut Squash
Thyme, Rosemary and Tarragon
Salt & Pepper and give the pot a stir.
Grab you Favorite Sauvignon Blanc.
Julia Child is watching to see if I pour myself a glass. LOL
Pour over the vegetables about 1/4 cup of the wine.
Pour yourself a Full Glass Of Wine too.
Place the Chicken right on top of the vegetables.
Lid goes on.
Place the pot into a 400 degree oven.
Roast until your instant-read thermometer registers 165 when
inserted in the thickest part of the thigh, about 1 hour.
Very Important...
After 30 minutes remove the LID.
Julia said to set the timer because we are not
burning this Roast Chicken :)
I removed the LID and continues to cook this
Chicken till it is Golden.
My Kitchen Smells Fabulous!
The Chicken is done and I can see the smile
on Julia Child's face :)
Save all the juices in the pan to pour over your slice of Chicken.
Carve the Chicken in the pot or transfer it to a cutting
board to carve more Elegantly.
Serve with the braised Vegetables and Sauce on the side.
As Julia Child Would Say...
"Bon Appetit"
That Means "Enjoy Your Meal!' in French.

It took Julia Child 9 years to write, revise and perfect the cookbook
When Mastering The Art Of French Cooking, Volume 1
finally published in 1961.
This cookbook was over 700 pages long and a huge success.
At a time when most Americans were eating convenient, frozen
food and fast meals, this taught people how to slow
down and enjoy the process of cooking.
Julia went on to write more than 15 cookbooks.
There Is Julia Child's Chicken :)
On February 11, 1963 "The French Chef" debuted on public television.
"The French Chef" won a Daytime Emmy Award in 1966. It
was the first time an educational television show won!
Congratulation Julia Child.
Julia Child won many Awards and Honors.
In 2001, Julia donated her home kitchen
to The Smithsonian Institution in Washington DC.
