Squash, Zucchini & Corn Casserole is a creamy, cheesy dish full
of summer vegetables. Lots of cheese and buttery cracker crumbs
makes one heck of a side dish or a total meal. Delicious!
At my Farmers Market I got a bounty full of my favorite
vegetable and that would be....ZUCCHINI.
I had some friends over for a lunch and served this casserole with a simple salad.
Lots of colorful Squash & Zucchini.
The Ingredients....
Dice up one medium onion and toss into a pot with 2 Tbsp of butter.
With a mandoline thinly slice up about
1 1/2 lb of yellow squash and the green zucchini.
Slice the corn off three ears of corn while you enjoy a glass of cold
Cherry Sun Tea!
Toss all the squash and zucchini in with the pot of onions
Add a bit of garlic and over medium heat saute' for 10 minutes.
Once the vegetables are sauteed toss them all into a
large bowl and add salt & pepper.
To the bowl add in 1/2 cup of mayonnaise and 1/2 cup of
sour cream. Then give the bowl a gentle mix:)
Tumble in all that sweet corn.
Another gentle mix :)
Toss in 1 cup of white Cheddar cheese and 1/2 cup of Parmesan cheese.
To the bowl pour in 2 beaten eggs.
Another gentle mix :)
Toss in a half packet of Ritz Crackers crushed up fine.
Another gentle mix :)
Butter up a 9x13 inch casserole dish.
Pour all the Summer Vegetables mixture into the dish.
And we are not done yet...
Melt 2 Tbsp of butter and combine with 1/2 cup of crushed Ritz Crackers.
Sprinkle the Ritz Crackers over the top and a
bit more shredded Parmesan Cheese.
Off to a 350 degree oven with this casserole for
about 45 to 50 minutes uncovered.

smells AMAZING!
Garnish with some green onions and get ready for
a mouth full of Summer goodness!
Lunch is ready!
Just grab the Salad & Wine and head out to the pouch!

I have to say I have made this casserole several times
and it always is a Happy Crowd Pleaser.
You can make the casserole in advance and refrigerate or
freeze unbaked for later.
