CILANTRO-LIME CHICKEN THIGHS AND POTATOES

 


Add Summer Breeze to your menu by making..... 

Cilantro-Lime Chicken Thighs and Potatoes!

This dish is made with such a flavorful sauce of olive oil, garlic, cilantro
and freshly squeezed lime juice. 

It's an easy and quick recipe.

Tastes Delicious with a pitcher of  Margaritas!


This is all you need. You can make this dish with 4-6 thighs.


Generously season both sides of the chicken thighs with salt & pepper.


Toss some olive oil in a sauce pan.


Heat olive oil in the pan over medium heat. Add the chicken, skin side down
and cook the chicken for about 5 minutes, until the skin is crisp,

Flip the chicken thighs over to the other side, turn off the heat 
and let the chicken brown on the other side.


Set the chicken aside.


In the mean time dice up about 3 yellow potatoes.


Toss the potatoes into a bowl and squeeze in the juice of one lime.


Throw in about 6 cloves of whole garlic.


To the bowl add in fresh chopped Cilantro plus some salt & pepper.


Pour in about 3 tablespoons of olive oil and give the bowl a stir,


Tumble all the potatoes into a 9 x13 baking dish.


Nestle in some fresh slices of limes and a few bits of butter into the potatoes.


Place the chicken thighs on top of the potatoes.


Don't forget to pour all the juices over the chicken from the sauce pan :)


Place the chicken uncovered in a 400 degree oven to bake for about an hour.



Once the chicken is done remove the cooked limes.


Garnish the Chicken with some fresh Limes & Cilantro.


Enjoy a nice cold Margarita with this
delicious Cilantro-Lime Chicken and Potato Dish.

I feel a Summer Breeze has come!

P.S.

You could do this dish with lemons too.

Also, if you have any left over potatoes, make a Potato Salad :)
