SHRIMP CREOLE


I have been making Shrimp Creole for years now, because my family Loves this dish. My mother used to make Shrimp Creole often while I was growing up. I have tweaked my mom's Creole, adding lots of hot Spices and Sausage getting inspiration from one of my favorite cookbooks " The Junior League of New Orleans ".


My New Orleans  Shrimp Creole, hot and spicing, was just perfect for a Mardi Gras Dinner Party. I  have to celebrate every Holiday. Right!


Had to have The Bulleit Bourbon's for party favors. :)



Roasted Red Peppers filled with Pepper Jack Cheese!
Spicy Hot Artichoke Dip!
Polenta topped with Pepper Jack Cheese and Black Olives. 
They are  ready for the oven!
Making appetizers ahead gives you lots of time to change your clothes twice…
and Swipe Some Lipstick on.




Green Peppers , Onions and Celery are all chopped.


Hot Spicy Sausage is sliced.


Raw Shrimp is peeled.

INGREDIENTS

2 1/2 pounds raw, peel and devein shrimp
1 1/2 tablespoons bacon grease
1 1/2 tablespoon flour
1/3 cup chopped green pepper
1/3 cup finely chopped celery 
1/2 cup chopped onion
1 8-ounce can tomato sauce
1 16-ounce can Italian plum tomatoes with basil
1 clove garlic
3 dashes Tabasco or more
2 tablespoons Worcestershire sauce
1 teaspoon sugar
2 teaspoon salt 
1/4 teaspoon pepper
2 tablespoon fresh parsley 
3/4 cup chopped green onions
2 cops steamed rice
2 tablespoons Original Creole Seasonings. (I like Tony Chachere's
1 4oz can diced green chiles ( hot)

In a large pot, heat bacon grease and add flour, stirring constantly until roux is golden brown. Add onions, green pepper, tomatoes and green chiles. Blend well. Add garlic, Tobasco, Worcestershire sauce, sugar, salt , pepper and Creole Seasoning. Add shrimp and parsley; cook 30 minutes. Sever over rice.


I somewhat double this recipe because I was serving 10 people and we love our the leftover 
Shrimp Creole!

P.S.  Please, don't take the ingredient measurements in my Shrimp Creole to literally. This recipe is meant to be changed up, make it your own. My husband always adds more hot sauce to his bowl.  
Maybe adding chicken could be Jazzy too!
