Savory Sausage And Tomato Pudding


The British name of this dish is “Toad In The Hole" and it will bring smiles to your table every time you make it. The pudding is much like a popover (who does not just love popovers) with a sausage nestled in. It just browns and puffs in the oven. I made this dish for a impromptu Brunch we had. Savory Sausage and Tomato Pudding would be fabulous for dinner or maybe… after your late night of kicking up you heels and painting the town!
Ingredients
1 1/1 cups all purpose flour
1 1/2 cups of milk
3 large eggs 2 tablespoons unsalted butter, melted
1 teaspoon coarse salt
1 tablespoon extra-virgin olive oil
1 pound sausage of your choice
5 whole scallions
10 cherry tomatoes
Ok, Lets Get Cooking!




Preheat oven to 425 degrees. In a blender, combine flour, milk, eggs, butter, and salt. 



in a 10-inch ovenproof skillet, heat oil over medium-high. Add sausage and scallions; cook until browned, about 5 minutes. 


Pour batter over sausage, and top with tomatoes. Bake until puffed and set, about 30 minutes.


Pour everyone another glass of Champagne and serve immediately.
