Mini Salads


It sometimes seems to me making a salad for a dinner party crowd can be a big production ( just getting the timing right). If you dress and toss the salad too soon and the guest aren’t really ready to sit down…you  will have a Soggy Salad. I prepared these salads in the morning and now… my first course done :)
My tip is to…Chop up crunchy vegetables that can sit in a dressing and quiet honestly almost marinade, into a big bowl. I don’t use any soft lettuce because that’s what really gets soggy fast. I then fill my cute mini bowls with the chopped vegetables and pop  them in the refrigerator till dinner is served.



My pick for vegetables were cucumbers, red radishes, celery and my favorite salad dressing. I garnished the mini salad with chopped green onions. The salads all looked adorable at each place setting. This one is for you.
