Maple Glazed Roasted Acorn Squash.


There are so many squash out there that I absolutely love. Acorn is right up there with one of my favorites, and you can eat the skin too !
This recipe is so easy and is the basis to what ever your imagination can come up with to embellish this recipe even more. Maybe try…bacon bits, parmesan cheese, or even  pomegranates sprinkled on top.
Lets get cooking!


If your not convinced that acorn squash ia all that delicious then at least love the fact that it’s called ” acorn squash ” because it looks like a big acorn…now thats adorable.
Preheat your oven to 375 degrees. Slices you acorn squash in half ( watch your fingers when slicing ) and scoop out all the insides. Now make slices the size you prefer.


Place acorn slices on a baking dish and sprinkle with salt and pepper. Drizzle olive oil all over the top and then brush with your maple syrup over each piece of the acorn slices.



Roast squash for 35 to 40 minutes occasionally tossing around, to avoid sticking. 7 to 10 minutes before roasting is complete brush a small amount of maple syrup over each piece of squash and finish roasting.


I served my ” Maple Glazed Roasted Acorn Squash” with my roasted chicken thighs & million cloves of garlic. Not really a million, but a lot. I will share this chicken recipe with you later. 
Enjoy your Acorn Squash with just about anything. :)
