In the summer we often spend lots of time at the grill. Skirt Steak is a family favorite,especially this version that temps the warmth of garlic, soy sauce and ginger with the sweetness of pineapple.
Lets Marinated.
1 cup pineapple juice
1/2 cup fresh pineapple, large dice
1 cup low low-sodium soy sauce
1/2 cup granulated sugar
1 tbsp minced garlic
1 tbsp minced ginger
1 to 1 1/2 lbs skirt steak
Place first 6 ingredients into a bowl and mix well.
Place skirt steaks into marinade and marinate for 1 to 2 hours.
Preheat a grill to medium-high heat and lightly oil the grill grates.
Lets Grill.
Remove steaks from marinade, pat dry and grill to your liking, along with pineapple slices. Remove steaks from grill and allow to rest briefly before slicing across the grain.
This dish could be paired with so many side dishes. I served my skirt steak with a Creamy & Cheese Polenta and Grilled Vegetables. I would for sure use this marinade with a Flank Steak too. Get your grill on!
