John and I spent a week in San Miguel De Allende Mexico. We took a fabulous cooking class with my sister Peggy and her husband Graham given by Chef Paco Cardenas from El Petit Four M.R. We made this wonderful desert that Paco served with mix berries. I changed up the presentation a bit for a dinner party I had at home… Shot Glasses !
Here is the recipe.
1 cup heavy cream
1/2 vanilla bean ( just inside )
1 cup bittersweet Mexican Chocolate 71% cacao, finely chopped
!/4 cup Tequila … YES!
fresh mixed berries if you like
Here we go…
In the bowl of an electric mixer, using the whisk attachment, beat the cream with the vanilla seeds to soft peaks.
Pour the Tequila on top of the cream and mix it very well.
Melt the chocolate and pour it on top of the Tequila cream.
Whisk together until smooth.
Spoon this mousse into any festive glass like a Martini glass or a Shot glass. By the way, if you continue to taste and lick the bowl you may be DrUnK by the time your party starts. Enjoy
