RASPBERRY CRUMBLE COOKIES

 


Raspberry Crumble Cookies not only look pretty, they are
Pretty Darn Delicious too!

These cookies have the delightful tartness from the fresh 
raspberries with a buttery crumble base.

Imagine sinking your teeth into a cookie that's soft and chewy on the
inside, with a crispy edge that adds just the right CRUNCH.

Topped with a sweet crumble and hint of vanilla, these cookies
deliver a perfect balance of flavors and textures that make
them Irresistible.

Raspberry Crumble Cookies!


Grab your bright color cooking utensils.


Let's get the Cookies going.


In a fun Green striped bowl add in...

1 cup fresh raspberries
1/4 cup sugar
1 tbsp cornstarch


Add in 1 tbsp of lemon juice.


Gently toss to coat the raspberries without mashing
them and set the bowl aside.


For The Cookie Dough cream together with a mixer....

1 cup of unsalted butter, softened
1 cup of white sugar
1/2 of brown sugar


Once the butter and sugar are all creamed up add
in 1tsp of vanilla extract.


Beat in two eggs to the bowl one at a time.


Second egg cracked in.


With a bright colored spatula scrape the sides of the bowl.


In a small bowl add in...

2 cups of flour
1 tsp baking powder
1/2 tsp of salt


Whisk all the dry ingredients together.


Gradually add the dry mixture to the wet ingredients.


Grab that bright colored spatula and mix till combined.


Scrape the sides of the bowl with your favorite designer spatula.

Hermes Paris worked perfect for me :)


Now for the Crumble part of the cookie.

In a small bowl add 1/2 cup of brown sugar.


Toss in 1/2 cup oats & 1/2 cup of flour


Tumble into the bowl 1/4 cup of softened butter and 
sprinkle in 1/2 tsp of cinnamon.


Give the Crumble and mix then have a taste because it's Yummy :)


Grab a bright Pink baking sheet to match the raspberries
and line it up with parchment paper.


Time to assemble the cookies :)


Scoop about 1 tablespoon of cookie dough.


Place the dough on the cookie sheet and add a small
spoon full of the raspberry filling.


Then enclose the filling with the dough to form a ball.


Sprinkle the crumble topping generously over each cookie.


Off to a 35O degree oven for about 20-25 minutes to bake.


Got my Apple timer set so I don't forget
my cookies are cooking...

But I know I will smell them baking :)


Raspberry Crumble Cookies are done so top them with a
