SOUR CREAM BEEF NOODLE CASSEROLE

When it comes to comfort food, few dishes evoke as much nostalgia
as this Sour Cream Beef Noodle Casserole. You could
call it "An Organized Chaos" of rich flavors with
creamy textures to create a meal that feels
like a warm hug!

It's Messy & Delicious.

Lets make a hot mess in the kitchen now.

In a large Yellow Dutch Oven pour in a bit of olive oil
and one diced onion.

Tumble in 1 pound of ground beef and brown it up on medium heat.

Mince up two gloves of garlic.

Add the minced garlic, stir and continue cooking.

A bit of salt please.

Pour in 2 15oz cans of your favorite tomato sauce.

Grab 1 teaspoon of Italian seasoning and as much
red pepper flakes as you like.

In go the spices.

Now green chiles are totally optional. For me it's a YES.

Green chiles are tumbled in!

Have a taste to see if you need to add a little something.
Nope, it tastes perfect that I could stop now
and just grab a bowl...LOL

Let the meat mixture simmer on low while
you whip up a few other things for
this Casserole.

Boil up about 8oz. of Egg Noodles in salted water
for about 4 minutes. You want the noodles
a bit firm because they will cook
more again in the oven.

Now just drain the noodles and set them aside.

Grab one cup each of Sour Cream and Cottage Cheese.

Mix the Sour Cream and Cottage Cheese together in a large bowl.

In go the noodles to the bowl of cheeses.

Now mix it up.

Did someone say Pepper?

Yes....I love my Pepper!

Better butter up your cute casserole dish well :)

Layer the casserole dish with half of the noodle mixture first.

Spoon over the noodles with half of the meat mixture.

Now repeat with the noodles over the meat.

Did someone just ask if this was a Riff on a Lasagne?

No it is not, It's a Sour Cream Beef Noodle Casserole. LOL

Spread the rest of the luscious noodle mix over the top of the beef.

Yup, now the rest of the meat mixture.

Not done YET...

Grate up a cup of some good Cheddar Cheese.

Sprinkle Sprinkle Sprinkle.

Into a 350 degree oven on a sheet pan because it
bubbles over for about 30 minutes.

Set your timer so you don't forget. :)

Now this just smells and looks like a yummy
Hot Mess.

This towel that my sister Peggy gave me is fitting for this

Sour Cream Beef Noodle Casserole!

It's Hot and It will get Messy...

Imagine a forkful of tender egg noodles coated in a rich cheesy
sauce, paired with a hearty bite of seasoned ground beef
and just the right amount of tang from the
sour cream.

I am not going to Imagine...

Taking a big bite now!

And a second bite too because it is a Symphony of
Deliciousness in my mouth.

"An Organized Chaos" in this casserole dish.

Whether you grew up eating casseroles or are new to their charm.
this dish will quickly become a favorite in your household.

Enjoy!

P.S.

It's a perfect sneak bite in the middle of the night right
from the fridge cold too :)
