Chicken Posole is a delicious rich Mexican stew that originated in
the state of Michoacan Mexico and is traditionally prepared
during special occasions or holidays.
My special occasion is that it is now Sweater Weather and
this dish will make you feel all cozy and warm.
This is going to be a One Pot Meal so...
Dis The Dishes!
Lets head to Mexico in the kitchen now :)
Grab your Crockpot and place in 8 bone-in chicken thighs.
Salt and Pepper both sides well.
Not to mention the bone-in chicken thighs yield the
most flavorful chicken stock.
Cover the chicken with one chopped onion and one Poblano pepper.
Next, add in 2-4 ounce cans of diced green chiles and
some minced garlic to taste,
Sprinkle in 2 teaspoons of Cumin and 1
teaspoon of Oregano.
Pour in 4 cups of chicken stock that comes in a Green box.
Green because Chicken Posole is Green. LOL
"Little Dab Will Do Ya" with some Salsa Verde.
The main ingredient in Chicken Posole is Hominy.
If you never had Hominy I think you wll
love it and become a fan.
Add in 1- 25 ounce can of white Hominy, drained.
Toss in a handful of Cilantro.
Can we just talk about how great the colors look here?
Put a lid on it and cook on low for 6- 8 hours.
Your kitchen will start to smell
AMAZING!
Now go and have some fun or maybe get some chores done.
Think I will just sit on the porch and watch
Rose and John wash the car, then a Netflix movie!
Remove the chicken and shred into bite size pieces and tumble
the chicken into the crockpot. Discard the bones.
Squeeze in one lime for that little extra flavor pop.
Have a taste to see if you want a bit more salt & pepper.
You could server the Chicken Posole straight from the
crockpot but I decided to pour it all into a cute
white pot to show off all the
Colors!
Grab a Mexican Beer because its time to serve up
The Chicken Posole.
Garnish the Chicken Posole with some radishes & sour cream.
Have a bite because your mouth will feel
like it's on a vacation in Mexico.
