SUMMER CORN & BLUEBERRY SALAD

 


This Summer Corn & Blueberry Salad will have you

Oohing and Aahing after each bite I guarantee it!

I made this salad for my dinner party over the weekend 
and my friends just loved it.

The unexpected combination of the corn and blueberries
is so DELICIOUS and with lots of
Summer left I will be making this
salad over and over again!


Farmers Market On My Counter...


Get 6 ears of fresh sweet corn, husked.


Fill up a CLEAR pot with water and a bit of salt .
Bring the pot to a boil to cook the corn.


Tumble the corn into the Clear pot.


Cook the corn covered for 5 minutes.

Do Not Over Cook The Corn....you want a crunch to it.


Once the corn is done rinse with cold water.
Pop the corn in the fridge to get it nice and cold.


For The Salad...

Dice up a small red onion
Slice up one cucumber.
Chop up one jalapeno


For the Dressing mix together...

2 tablespoons of fresh limes juice
2 tablespoons of olive oil
1 tablespoon of honey
1/2 teaspoon of ground cumin
1/2 teaspoon of salt


Cut the corn off the cob.


Toss in the Cucumbers.


Toss in the Red Onions.


Toss in the Blueberries.


Toss in the Jalapenos and some fresh Cilantro.


Give the bowl a gentle mix...

How Pretty Does This Salad Look?

But wait until you taste it!


Pour in the dressing (maybe even a little extra) and give the bowl a gentle stir.


Absolutely Have A Taste Now!

Right, it tastes Sweet, Delicious and Yummy


No Garnish needed on this beautiful salad, just saying


Transfer the Corn & Blueberry Salad into
a cute serving bowl.


This Summer Corn & Blueberry Salad was perfectly paired
with Grilled Salmon for my friends.

This Salad is perfect with Chicken or Steak too.

This Salad is also perfect straight from the bowl in the fridge
and you know what I'm talk'n about...in the middle of the night!
