MEXICAN SOUR CREAM RICE

 


If you're looking for a great and delicious side dish to your 
meal this week, "Mexican Sour Cream Rice" is a perfect one!

I haven't met a single person who doesn't just love Mexican Food.
I think we can all agree that it is just down right yummy.

Mexican Sour Cream Rice is so flavorful and perfect with your 
Chicken, Pork, Steak , Fish or just about everything!


Making Mexican Sour Cream Rice is easy and will quickly
become a staple on your dinner table. These are a
few things you will need :)


Pull out your Green Dutch Oven :)


To the pot add 1 can (14 ounce ) of chicken broth and 1 cup
of uncooked Jasmine Rice (not Minute Rice).

Bring the pot to a boil on the stove top.


Once the rice begins to boil, cover and reduce heat to low.
Simmer for 20 minutes. My timer is set.


Dice up about 1/4 cup of Cilantro.


Looks like my rice is done.


Pull the rice off the stove to add all the flavors in :)


To the pot tumble in...

2 cups of thawed frozen corn
1 cup of room temp sour cream
7 ounces of diced green chiles (add more if you like)


Toss in 1 cup of Monterey Jack cheese and mix it all up.


Add some diced black olives.


In goes the Cilantro. I know there are some Cilantro haters
out there but I think it's a must :)


Salt & Pepper to taste.


Grease up an 8x8-ish casserole dish.


Pour the rice mixture into the casserole dish.

Sprinkle the dish with more of the Monterey Jack cheese.

Bake uncovered for 30 minutes till it all is melted and bubbly.


Mexican Sour Cream Rice is done and I need a fork NOW.


Garnish with some Cilantro and serve
immediately while HOT!


Added a few extra black olives on the side and topped with green chiles!

You may even like a little of your favorite Hot Sauce on top.
I have a bottle sitting back there :)


Mexican Sour Cream Rice can go with almost anything you see fit.

Not only is this rice absolutely delicious right out of the dish but it is also perfect for 
leftovers, You don't have to eat it only for dinner so 
why not take it for lunch?

It will stay good in your fridge for up to 5 days.
Plenty of time to enjoy more than once.

P.S.

Can You Freeze Mexican Sour Cream Rice?

Yes, you can freeze it. Let the rice cool and then place it in 
airtight container and your good to go for 4-5 months.

Just heat it up in your microwave.
