LEMON CUSTARD CAKE

 


It's Springtime and Easter is right around the corner. 
This is your perfect, delicious dessert.

Lemon Custard Cake is like magic because it is a triple-layered 
cake made from just one batter!

During the baking process, the batter separates into three different layers. Dense cake layer
on the bottom, creamy custard-like filling in the center, and a 
light and fluffy cake layer on top. This cake is so
Light & Refreshing!


Lets make some magic!


Separate 4 eggs and whip up the egg whites until STIFF peaks form.


Perfect STIFF peaks so now set the egg whites aside.


To the egg yolks add 3/4 cup of sugar and beat until pale yellow.


Perfect pale yellow so now scrape the sides of the bowl with a spatula.


Pour in 1/2 cup of unsalted butter, melted and slightly cooled. Give the bowl a mix.


Add in 3/4 cup of flour to the bowl and mix again.


Toss in the zest of two large lemons.


Add the juice of two lemons.


Pour in about 3/4 cup of the fresh lemon juice into the bowl and mix.


Add in 1 teaspoon of vanilla extract.


Tumble in 1/4 cup of flour and pour in 1 3/4 cup of lukewarm milk.
Then give the bowl a good mix again.


Add egg whites and whisk by hand. You don't need to fold in completely. Leave
small egg white lumps. When you pour it into pan, lumps will float on
the surface and create the top layer during the baking.


Note: the batter will be thin.


Line an 8x8-inch baking dish with parchment paper leaving overhang
on the sides. Lightly grease with cooking spray.


Pour the batter into the pan and bake in a 325 degree oven for 40-60 minutes 
(until the cake is barely jiggly in the center, but top is firm to touch).

Baking time might vary depending on your oven. Start checking after 35 minutes.

If the top browns quickly, you can cover the cake with foil.

Do Not Overbake, or the cake will turn out rubbery and not custard in the center.


While the cake is baking enjoy this batter because it's delicious :)


Cool the cake completely before dusting with powdered sugar.


Place the cake on a cute plater and grab the powdered sugar.


Dust all over the top with the sugar!


Garnish with some springtime lemons!


The magic happened, three layers of yum!
