COCOA-NUTTY COOKIES

 


It's that time of year to start baking and I love anything made with Cocoa!

You will love these delicious Cocoa Pistachio Cookies. So easy to whip up and so easy to gobble up.

Makes for a perfect treat & a yummy holiday hostess gift.


In a large bowl add 1 cup of flour and 1/2 cup of Cocoa.


Add in 1/4 teaspoon of salt.


1/4 tsp of baking soda to the Cocoa.


Give all the dry ingredients a whisking and set aside.


In another bowl tumble in 1/2 cup of room temp unsalted butter.


To the bowl add in 1/2 cup of sugar. With your electric mixer beat the bowl
till the butter and sugar are light and fluffy.


Crack in 1 large egg and 2 tsp of vanilla extract. Give the bowl another mix.


Perfect!


Pour in all the dry ingredients to the bowl and beat till all are incorporated.


Enjoy the dough off of these blades....Yum


Divide the dough in half.


Using plastic wrap roll the dough into 2 logs about 8 inches long.


Give about 1/2 cup of unsalted pistachios a good chop.


Divide the pistachios in two, one for each log.


Roll the pistachios to evenly coat the dough.


Wrap both logs in the plastic wrap and refrigerate until firm, at least 1 hour.


When you are ready to cook just slice the dough into 1/4 inch thick rounds.


You can bake both logs or save one for another day.


Place the cookies on a lined cookie sheet and bake in a 350 degree oven for about 12 minutes.


Smells amazing in my kitchen!


Give the cookies a little dusting with some Confectionery Sugar Snow :)


Place them on a tray and you are ready for a cookie exchange.


These cookies are a perfect hostess gift.  Put some pistachios in the bottom
of a cute jar then add the cookies and a few more pistachios on top.


Almost gift ready!

P.S.


If you have some broken candy canes skip the pistachios,
break up the candy and roll it around the dough :)
