TURKEY SOUP

 


Now that Thanksgiving is over and everyone thoroughly enjoyed the Roast Turkey
you made, reinvent your leftovers with this savory, hearty 
Turkey Noodle soup....then top it off with crusty stuffing :)


Grab the Turkey and let's make soup for lunch, dinner and some for the freezer!


Pull out one of your largest pots and tumble in the Turkey carcass.
My Turkey was 20 pounds.


Pour in enough Chicken Broth to cover the Turkey completely.

The great thing about Homemade Turkey Soup recipe is that it's fairly low
key. If you don't have chicken broth on hand, you can swap
in vegetable or beef broth.


Bring the broth to a boil, then reduce to a simmer. 
Cover and cook for 30 minutes.


Slice up about 8 carrots.
Slice up a stalk of celery.
Chop up one large onion.


Now to fill up the pot :)


Pull the pot off the stove and add in 1 teaspoon of minced garlic.


Sprinkle into the pot...

1 teaspoon kosher Salt
1 teaspoon coarse ground Pepper
1/2 teaspoon Rosemary
1/2 teaspoon Thyme
1/2 teaspoon Poultry Seasoning
1/2 teaspoon Oregano
2 Bay Leaves


Toss the carrots into the pot next.


Toss in all the onions and celery into the pot.


Pour all that leftover turkey right into the pot!


Squeeze in the juice of one lemon.


Top with some celery leaves.

Bring the pot back up to a boil.


Turn the pot down to a simmer and put a lid on it for about 45 minutes.


Again this recipe can be unique to your own taste buds. Not feeling
like egg noodles? Use some Rice, Orzo, Risotto or
any other starch you have on hand.


I went with Fusilli pasta.

I cook the pasta in a separate pot and not in the soup. I plan to freeze some of my
Turkey Soup and pasta does't freeze well. Also, I may just
have my next bowl of soup with egg noodles :)


Have a taste of your soup after 45 minutes. Not enough of a certain
seasoning?  Just add some more :)


Grab the pot off the stove and remove the Turkey carcass.


Pour as much soup as you plan to enjoy into a bright fun pot.
Save the rest for freezing :)


Pasta into the bowls...


Ladle the Turkey Soup, garnish with stuffing and light the candles!
