LEMON ZUCCHINI BREAD


Bring some "Sunshine" into your home!

This is a quick and easy bread to whip up on one of the last lazy summer days!

Lemon Zucchini Bread is a super flavorful and moist bread that tastes great for a dessert,
as a snack, or even for breakfast or brunch!


  With your Rooster sous-chef whisk together...

1 1/2 cups of all-purpose flour
1/2 teaspoon of salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder


In a smaller bowl, combine 3/4 cup of sugar and zest of one lemon.


Grab another bowl and...

Crack in two eggs
1/2 cups of vegetable oil
3/4 cup of sugar

Give the bowl a good whisk.


Add to the egg mixture 1 1/2 teaspoons of fresh lemons juice.


With a lemon spatula give the bowl a good mixing.


Pour all the egg mixture into the dry ingredients.


Yup, with that lemon spatula again mix the bowl up good.


Perfect...now set the bowl aside.


Grate about 2 medium size zucchini to make up one cup.


One cup perfect :)


Fold the zucchini into the batter.


Have a little taste...YUM


Grease and flour a 8 x 4 inch loaf pan.


Off to a 350 degree oven for 45-50 munutes, or until toothpick inserted in
the center comes out clean. Your kitchen will soon smell
Divine!


We are going to glaze this bread after it completely cools so while
you are waiting enjoy a bright yellow Mimosa :)


My Champagne Topper....CUTE


For the glaze you will need 1 cup of powdered sugar
and some fresh lemon juice.


Mix into the sugar about 6 to 7 teaspoons of lemon juice and stir.


Drizzle the glaze over the top of the bread :)


Slice & Enjoy!

Most things are ten times yummier when they're homemade, and I feel
sweet breads are definitely one of them. 

There is really no comparison !
