BAKED HONEY BERRY OATMEAL


For those of you who have been lucky enough to be in a quarantine with your
toddlers, young kids, teenagers, college students and grown kids... Breakfast can
be a crazy time for you now, right? I have recipe for you.

Skip the Mimosa that was mine for our
Sunday Brunch :)

This Baked Honey Berry Oatmeal is a cinch to whip up and feeds a crowd.

My top 10 reasons I love the most about this dish are...

1. It's healthy.
2. Tastes great hot or cold.
3. Not just for Breakfast.
4. Makes a great snack.
5. Cut into squares and keep in the fridge.
6. Freezes great.
7. It's ready on the go.
8. Perfectly sweet, chock full of berries and pecans.
9. It's not that runny and semi- texture like overnight oats (not a fan)!
10. It's so "Delicious" you will want to inhale it.


So lets get started with the beloved Baked Honey Berry Oatmeal.


In a medium bowl add in...

2 cups of quick-cook oats.
1 tsp. baking powder
1 tsp. cinnamon


To the bowl add in next...

1/4 tsp salt
1/3 cup of packed brown sugar.


Give the dry ingredients a good mix.


In a separate bowl add in...

2 cups nonfat milk
2 eggs
1/4 tbsp. vanilla

2 tablespoons of honey.


Pour into the bowl 1 1/2 tbsp of melted butter and whisk till all incorporated.

Take a sip of you Mimosa :)


Tumble into a greased 2 quart baking dish 1/2 cup of
Blueberries & Rasberries.

Top evenly with the dry ingredients over the fruit.


Pour on the wet mixture all over the top of the dry ingredients.


Top with more berries.


Sprinkle the dish with 1/4 cup of chopped pecans and off to
a 375 degree oven for about 35 to 40 minutes.

Cook until oats have absorbed the liquid.

Trust me, your kitchen will soon smell AMAZING!


Let the Honey Berry Oatmeal cool just a bit before cutting.

So go make yourself another Mimosa or another cup of coffee :)


Time to eat.


So yummy and so healthy all at the same time.

I am a big fan of making extra so if I have that "Craving"  it's there.

I cut the Honey Berry Oatmeal into squares to pop into the refrigerator
and several into the freezer. This way I am
Breakfast & Snack Ready.
