LEMON TIRAMISU


I don't know about your lemon trees but mine are in full bloom!

Tart ingredients will brighten and balance pretty much any dish or drink you think of.

So Pucker Up!

Lemon Tiramisu will make you forget everything about traditional flavors. This 
recipe takes the same form as the layered expresso dessert, but includes lemons, ladyfinger cookies 
dipped in citrus simple syrup, lemon curd. and spiked whipped mascarpone.
Spring has sprung in my house :)


DELICIOUS!


Grab a bunch of lemons from the market or from your lemon tree.


For The Lemon Curd


In a medium pot pour in 1 cup of sugar.


The zest of three lemons.


The juice of three lemons.


Two egg yolks.


Two eggs.


Cut up 1/2 a cup of unsalted butter into cubes.


Tumble all the butter into the saucepan.


Cook over medium heat stirring constantly.


Bring mixture to a boil and remove from heat. You can see
how it all thickened up. Perfect :)


Stir in 1 tsp. vanilla.


Strain the lemon curd through a fine-mesh into a bowl.


Use a white spatula to help press the lemon curd through.


Cover the bowl with plastic wrap and refrigerate 1 to 2 hours.

For The Lemon Syrup


In a small saucepan toss in one cup of sugar.


The zest of three lemons.


The juice of three lemons and 1/4 cup of water.


Heat over medium just until sugar dissolves.


Pour the lemon syrup into a glass and and let it cool.

For the Mascarpone Cream.


In a small bowl beat 1/2 cup of heavy cream with a mixer
until stiff peaks form.


In a medium bowl beat 1 8-oz container of mascarpone cheese.


To the mascarpone cheese add in 1/3 cup of sugar
and the zest of 1 lemon.


Give the bowl a good mixing.


Grab your whipped cream.


Gently fold in the whipped cream into the mascarpone cheese.


Run and grab your Italian ladyfinger and lets assemble the
Lemon Tiramisu!


Spoon one-third of the mascarpone cheese into the bottom of
eight or four glasses depending on the size you
will be serving your Tiramisu in.
I went with four.


 Quickly dip ladyfingers halves into lemon syrup, coating both sides.


Place the Ladyfingers on top of the mascarpone cheese.


Top with some of the lemon curd and then mascarpone cheese.


Repeat cookie, curd and cream layers one more time.


Almost done.


Top the Lemon Tiramisu with the mascarpone cream.


Brighten up the Tiramisu with some lemon zest :)


Just too pretty to eat.


Grab a spoon!
