Talk about light and refreshing salad that requires no cooking! The Albacore tuna
is the main ingredient to creating this wonderful, healthy salad you
will want to make all summer long.
This Mediterranean Tuna Salad is perfect for a light lunch or dinner. It is just
filled with flavor from all the vegetables and fresh squeezed lemons.
Toss in a bowl one cucumber, cut lengthwise and sliced & one red bell pepper finely chopped.
Finely chopped half of a red onion.
1/2 cup of black olives, cut in half.
1/2 cup of chickpeas.
Tumble in a bunch of chopped parsley, 2 cloves garlic minced,
zest of one lemon and juice of one lemon.
3 Tbsp of you absolutely favorite olive oil.
15 oz of your absolutely favorite can albacore tuna (drained).
Little salt & pepper and give the bowl a toss.
This Mediterranean Tuna has definitely made it to our favorite list and so easy to whip up.
Perfect for a summer Lunch or Dinner with just some crusty bread.
