Pair lemons and olive oil to make this delicious and simple Lemon Olive Oil Cake.
The only trouble you"l have is deciding if you want to share it.
The olive oil gives it a certain something that sets it apart and
elevates the cake from good to GREAT....
In a large bowl crack in 4 eggs with 1 cup of sugar.
Using your mixer beat on high until the mixture is fluffy and doubled in volume.
Fluffy it is and it takes about 5-7 minutes of beating. Don't skip this set :)
In a separate bowl whisk together 1 cup cake flour and 1/2 tsp baking powder.
Add in 1/4 tsp of salt.
The zest of one lemon.
Just whisk it all together.
Grab your favorite olive oil and add to the wet mixture 1/2 cup.

at Dean and Deluca to pick a bottle of Muraglia Olive Oil.
Not sure it's the taste or the bottle I love most.
Pour in 2 1/2 tbsp of fresh lemon juice.
Give it all a good stir.
Yes....Have a lick.
Using you rubber spatula gently fold in the flour mixture into the wet mixture.
Mix until the flour disappears. Do not over mix.
Pour the cake batter into your prepared spring form pan.
Bake for 40-45 minutes in a preheated 350 degree oven.
Enjoy this while the cake is cooking :)
Remove from oven and let it cool for about ten minutes.
Pop it out of the pan....
Dust with powder sugar.
This cake is casual enough for a little snack during the day outside enjoying
a vineyard. But fancy enough to impress your weekend guest!
This Olive Oil Cake can be served so may ways and I just like it simple.
You could top it off with sweetened whipped cream and berries too....Just saying
