These Tequila Lime Cheesecake Bars are the perfect summer dessert. So
simple and easy to whip up. I actually made several batches
because I served them at Claire & Freddies

There is Tequila in these guys not Margarita mix concentrate so they are
Booze-Laden Goodies
Soooo yummy, kinda like those super dangerous Margaritas you can
down on the patio before your head spins and you realize how
much Tequila you just drank.

To make the crust melt 1/4 cup of butter in a medium bowl.
Toss in 1 1/4 cups of Graham Cracker crumbs to the butter.
Line a 9x9 inch pan with aluminum foil and spray with a baking spray.
Press the Graham Cracker mixture into the pan. I used a glass for even pressing.
You maybe making one Tequila Lime Cheesecake Bar but I was making
FIVE!!!
Now for the Cheesecake...16 oz of cream cheese & 1/2 cup of sugar.
Beat cream cheese and sugar until smooth and fluffy.
2 tbsp of lime zest and 4 tbsp lime juice to the bowl next.
The Most Important Ingredients!
2tbsp Cointreau
2-4 tbsp of Tequila ....Maybe more ;)
Add in 2 tbsp heavy cream.
Crack in 2 eggs.
Mix until completely combined.
Pour the batter over the top of the crust.
Off to 375 degree oven to bake for 20-25 minutes until center sets up.

I arranged my Fiesta Flowers :)
For the Frosting...
16 oz. Cream Cheese
1/2 cup of Sugar
2tbsp Lime Zest
2tbsp Lime Juice
3tbsp Tequila
Allow to cool completely in the pan before frosting them!
I believe we are almost ready for a Fiesta Party.
Slice and Garnish.
