SPINACH AND CHEESE STRATA


This casserole is what you want for Brunch on the weekends for your guest.
 Mimi gave the recipe to Lori and Lori gave it
to me. Now I give it to you because it is so
"Delicious" and everyone loves it !!
Trust me I make it often.

I had my brother Bill's family and my family for brunch last Sunday and served this dish along with

Mini Waffle Bites
Grilled Mango Beef Sausages
Mini Bake New Potatoes
Fruit Salad
Tossed Green Salad

By the way, you make this Strata the night before your Brunch. Lets get cooking.


Cook 1 large onion in 3 tbsp of butter until soft.


While the onion is cooking drain and squeeze 1 10oz frozen spinach that has thawed.


Sprinkle in 1tsp of salt.


Sprinkle in 1/2 tsp black pepper & 1/4 tsp nutmeg.


Give the pot a good mix.


Tumble in the spinach stir and remove from heat to cool.


Slice & Cube 8 cups of (1inch) French or Italian bread.


Now for the eggs...


Crack 9 eggs into a bowl and 2 Tbsp of Dijon Mustard.


Pour in 2 3/4 cups of whole milk.


Give it all a good mix.


Grate up about 2 cups of Gruyere cheese.


Grab 1 cup of Parmigiano cheese.


Mix the two cheeses together in one bowl.


Butter 3- quart gratin dish all over.


Spread 1/3 of bread cubes in the dish.


Top evenly with 1/3 of the spinach mixture.


Sprinkle 1/3 of cheese.


Repeat layering twice ending with cheese.


Grab your egg mixture. Hey, do you still have a mixer like this? Love it.


Now pour the egg mixture all over the top....Yes there is room. Haha


Perfect, but we are not baking it now!!!!


Cover the Spinach and Cheese Strata with plastic and off 
toe the refrigerator for over night.

The morning of your brunch...

Let Strata stand at room temp for 30 minutes. Bake Strata in a 350 oven, uncovered,
in the middle of the oven until puffed, golden brown. and cooked
through, 45-55 minutes.


Grab your plates everyone.


It's time to eat. 


Don't forget to snatch a Mini Waffle Bite. Bacon Or Strawberry?
