SWEET CORN GAZPACHO


This beautiful Corn Gazpacho is made with fresh, sweet summer corn. It's a chilled,
creamy soup....No Dairy, so perfect on a hot summer day!


Three ears of corn, remove from the cob.. Love my new corn tool :)


All the fresh Farmers Market veggies you will need for this Gazpacho.


Chop up 2lb. yellow tomatoes.


2 yellow bell peppers chopped.


1/4 cup white onions, roughly chopped.


Optional, 1/4 jalapeno pepper (seeded) all into one big bowl.


2 teaspoons sea salt.


It's all about the "YELLOW"
Give the bowl a good mix and set it aside for about half hour.


Grab your bender, Olive Oil and Sherry Vinegar.


Working in two batches to blend add in 1/2 cup Olive Oil.


1/4 cup of Sherry Vinegar.


Blend till perfect for you. I like my Gazpacho chunky :)


Second batch is done. Give a taste, you may want to add a
little more of this or that. Remember it's your
Sweet Corn Gazpacho!


Pour the Corn Gazpacho into a serving pitcher.


Pour & Garnish


This soup can be made up to 3 days in advanced. Keep it covered in
your fridge till your ready to serve it.


Sweet Gazpacho, or any gazpacho for that matter, maybe just be the
single best summer food ever. Wait...Ice Cream!

HERE'S WHY YOU WANT TO MAKE SEEET CORN GAZPACHO

1. It's cold, which is fabulous on a hot day or night.
2. Taste like there is cream in it but... nope no cream.
3. Loaded with health incredible veggies.
4. It's refreshing.
5. It's crazy crazy crazy easy to make.
6. You can make a big batch and eat it for days.
7. You can serve as a meal or appetizer.
8. It's flipping CORN. Any who does't love corn?
