ITALIAN STUFFED FLANK STEAK


I'am totally enjoying pictures of my daughter Claire in Italy right now. She inspired me to whip up one of my favorites "Italian Stuffed Flank Steak" . The Provolone Cheese, earthy
sauteed Mushrooms, salty bite of Prosciutto and pepper Arugula are a 
winning combination.


Flank Steak is boneless meat. Because the meat is thin it takes well to a marinade, making it tender, flavorful and easy to roll.


Salt and Pepper the Flank Steak first then lay about four pieces of Provolone
cheese over the steak., leaving a 2-3 inch area uncovered alone
the edges of the steak.


Saute about 8oz mushroom and sprinkle over the cheese. Top with  
 some store bought Olive Tapenade.


Lay about 8 thin slices of Proscitto next over the top.


Bunch of fresh Arugula.
Starting with the long edge covered with ingredients, carefully roll the Flank Steak.
Tie the steak in several places tight. You may need a little help with the fist few ties, its easy.


There you go, all tied up.


In a large skillet heat up about 2 tablespoons of olive oil.


Place the steak roll in skillet and sear 5-8 minutes turning to brown on all sides.
Pop skillet into a preheat 350 oven for 30 minutes


Once the Flank Steak is done cover and let it rest for 10 minutes.
Don't Skip This Step!!!


That's what I'am talking about...


Claire's vacationing in Italy also inspired me to pull out my fabulous dishes
we purchased while on vacation in Deruta Italy years ago. 


Carefully slice about 1/2 inch pieces. You certainly could serve the 
Flank Steak from the cutting board but I plated mine.


Before serving save some of the yummy juices from the skillet.


A drizzle of skillet juice just adds to the flavor. :)


John pour the Italian Red and guest go first. Grab your plate
and a Check Gingham napkin. Lets head outside
and pretend we are in Italy.


Saute Lemon Zucchini & Italian Stuffed Flank Steak.

having endless flavor combos.
