MEXICAN CHICKEN SALAD


Why not change it up? This easy twist on a classic is sure to please everyone this summer.
Chicken Salad loaded with taco seasonings, corn and peppers. Don't
forget the Enchilada Sauce! So Good So Many Ways.


Start with 2 cooked chicken breast that have cooled, maybe left over from dinner last night.


In a bowl toss in a cup of cooked corn and one chopped pepper.


Half of red onion.


Pour in 1/4 cup of your favorite Enchilada Sauce into the bowl.


Hope you have some Taco Seasoning Mix.


Shake in about 1/2 a packet of Taco Seasoning into the mix.


One (3.5 ounce) can of Green Chiles.


Chop up about a 1/4 cup of Cilantro.


One tablespoon of fresh lime juice.


Of course every chicken salad has a splash of mayonnaise...3/4 cup.


Chop up the chicken into bite size pieces.


Yes, chicken next into the bowl.


Give the bowl a good mix.


Dash of salt & pepper. Have a taste to see if you need to add
a little of this or a little of that.


Lets make a sandwich...


The perfect amount of spice, crunch and simplicity. I am obsessed.
