PISTACHIO & WHITE CHOCOLATE PUDDING COOKIES


The prettiest cookies EVER! Super soft and chewy. I made these Pistachio & White Chocolate Pudding Cookies for a St. Patricks Day Party we were going for party favors.
How perfect would theses cookies be for Easter!


Yes, you need Pistachio Jello Pudding :)


Whisk together 1 2/3 cups of flour, 1 box of instant pistachio pudding, 
1 tsp baking soda, and 1/2 tsp salt in a bowl.


Cream together in another bowl 1/4 cup of light brown sugar, 
3/4 cup white sugar and 3/4 cup soften butter.


Add in one egg and 1 tsp of vanilla and beat till well blended.


Gradually stir in dry ingredients.


Once all combined add a few drops go green food coloring.


Now that looks like St. Patricks green to me!


1/2 cup of chopped pistachios into the bowl.


Then pour in 1 cup of white chocolate chips and give it a good mix.


Scoop out rounded tablespoon of cookie dough and place on parchment 
paper. Off to the oven in a 325 degree oven
for about 12- 14 minutes to bake.


And there you have it St. Patricks Day Cookies.


Ok, I am not sure what I am more excited about the cookies or
my darling "Simply Baked Cups" to package them in:)
