PECAN PUMPKIN PIE BARS


PUMPKIN! is just another word that shouts Fall. Could you hear it? With leaves falling and a chill in the air, it must be pumpkin time. This dessert is so yummy delicious and I am sure I'll be making
these till the season is over, like till Christmas. Pumpkin Pie Bars are perfect to take to 
friends or to a potluck. My bars went to our "Block Party" fun.


For the crust, add 1/2 cup of unsalted butter softened into a large bowl.


To the butter pour in 1cup of flour.


Add in 1/2 cup quick oats.


Drop in 1/2 cup of brown sugar, firmly packed next.


Mix until crumbly, using electric mixer on low speed.


Line and butter a 13-in x 9-in pan.


Press all the crumble into the pan and bake in a 350 oven for 15 minutes.
Get a move on and make your pumpkin mixture will the crust cooks.


Combined…
 1(15-oz) can of pumpkin
1 (11-oz) can of evaporated milk
2eggs
3/4 cup sugar
1 tsp vanilla
1/2 tsp. salt 1 tsp. ground cinnamon
1 /2 tsp ground ginger
1/4 tsp. ground cloves


Grab you mixer and beat well.


For the crumb top mix together 
1/2 cup chopped pecans
1/2 cup brown sugar
pinch of salt
2Tbsp. butter, soften


When you crust is done pour the pumpkin mixture over the top and bake
for for another 20 minutes. Pull the bars out of the oven
and sprinkle the pecan mixture over the top
and return the bars to oven
for another 15- 20
minutes.


Now here is the hard part. You really should let them coal to a least room temperature before you try one. Otherwise, your whipped cream will melt. These are perfect to make a day ahead of
time, just store in the refrigerator and pull them out a few minutes before serving.


Pass the whipped cream please!
