Foil pack dinners are the best. There's minimum effort involve, and the clean up is an absolute breeze. You don't really need serving plates. We had some friends for dinner at
the last minute. I knew I had a super busy day so I whipped up these
"Fancy Foil Fun" packets early in the morning.
The chicken was so incredibly moist.
Yes, this is how I served my casual dinner!
There was wine too!
Start with four chicken breast.
In a small bowl combined 2 tablespoons olive oil, 1 tablespoon Dijon mustard, 1/2 teaspoon whole grain mustard, 1/2 teaspoon dried thyme, 1/4 teaspoon dried rosemary and
a zest of one lemon.
Cut four sheets of foil, about 12-inch long.
Grab a fun cutting board and start slicing as many as you want of new potatoes.
Divide potatoes into 4 equal portions and add to the center of each foil.
Add some zucchini.
Mushrooms next and a drizzle olive oil, salt & pepper.
Top each packet with a chicken breast.
Brush on the mustard mixture.
Top each chicken with a slice of lemon.
Fold the sides over the chicken closed.
All wrapped up till I am ready to cook.
It's 6:30 pm and I am ready to bake these foil packets in a 375 degree
oven for about 45 minute to and hour. (depends how thick your chicken is)
Smells devine!
Just pop them all open and grab some wine.
Lets eat!

Vacations are over and schools have started. Make theses packets in the
morning, pop them in the refrigerator and you have a fabulous
dinner ready to cook that evening. XO
