MASON JAR LEMON MERINGUE PIES


It's Spring in a few days, right. Let's get our Pinwheels & Lemons out!
 I decided to make a Lemon Meringue Pie…With a twist.
Yes, in a Jar!


 I am lucky to have so many Lemons growing in my courtyard.
They are ripe so lets get baking!


 Get your sugar, graham crackers and soft butter into a bowl and mix.


Press graham cracker mixture in the bottom of some cute mason jars.
Off to the oven now.


Jell-O Pudding mix and three egg yolks.


Now just mix well.


Pudding is off the stove top and now juice from one lemon.
Seriously does this color yellow scream
SPRING!


After you take the mason jars out of the oven top them
with the Lemon Pudding!



Whip up your Meringue. I see stiff peaks. Perfect.


They are so gosh darn cute. Back into the oven.


They are done. Pinwheels and Lemon Meringue…
Spring is in the air!

INGREDIENTS

Jello-O Lemon Pudding
Eggs
Sugar
Crushed graham crackers

I crumbled the graham crackers into a Ziploc-bag and then added in the sugar and soften butter.
I mixed it up by hand and pressed into the bottom of the mason jars. Bake at 350 for
about 10-minutes

I simply followed the instructions on the Jell-O box for the pudding

To make Meringue: Beat together 4 egg whites and 1/2 cup of sugar. Beat until form peaks.
Layer onto top of jars and cook at 350 degrees for approximately 10- minutes.
Turn off oven. Tip: to prevent glass from braking, let jars cool downing oven before removing.
Once cooled, You can pup them into the refrigerator !
Not me, I grabbed a spoon and went
right in!
