Chicken Soup doesn't need much. It just needs tender Chicken, Hearty Vegetables
and fresh Herbs simmering in Chicken Broth.
Chicken Soup is a one way ticket to Cozy Town. I would say
this soup is more comforting than your favorite
Pajamas & Slippers.
While the Chicken Soup is cooking your kitchen will smell
amazing. There is no Scented Candle I know of
that can ever replicate it's Aroma!
I have been making my Chicken Soup for years. It's my go-to- recipe
when cold weather and rain strikes and I am craving something
light, brothy, nourishing and cozy warm!
Slice up about 10 Carrots. I know it sounds like a lot but this
is going into a BIG pot of soup so that I will
have plenty to freeze for later.
Slice up a whole stock of Celery.
Dice up one whole Onion.
Dice up several cloves of Garlic.
Grab a large Pink Dutch Oven.
Pour is some Olive Oil to the pot and sprinkle in some
Salt and Pepper. Toss in the Garlic.
Tumble all the vegetables into the Pink pot..
Saute the Vegetables on medium heat, stirring frequently
for about 4 to 5 minutes.
Add in Red Pepper flakes as much as you like.
Add in some Oregano to the party and stir, stir stir.
Vegetables are tender but still have a bite to
them so turn the heat off while you tend to your Chickens.
You will need 2 Roast Chickens from your
favorite market and start pulling
all the meat off the bones.

Looks like a lot of Chicken but this is a LARGE pot of soup :)
Tumble all the Chicken into the pink pot and mix it all up.
You will need about 6 cups of Chicken Broth that you can
buy at the store. I had my own Chicken Broth that
I made in the freezer. Both work great.
Pour the broth in and cook on medium heat.
The containers that the Chicken come in have tasty
juices left in them. Pour it all into the soup!
Do Not Throw It Away!
Some of the crusty skin on the Chicken had perfect seasoning
on them so into the pot they go for added flavor.
Just before serving remove the skin.
Bring the Chicken Soup up to a boil and then
down to a low simmer.
Continue to stir but not with one of your favorite Prada Spoons.
Almost forgot a few Bay Leaves to go in.
A few Celery leaves get tossed in too.
Have a taste to see if you want to add a bit more
Salt & Pepper.

this soup will not spill over the sides. LOL
My Chicken Soup is done and there is no scented candle
that will ever replicate this yummy Aroma smell
coming from this Pink pot.
Put a lid on the pot till you are ready to enjoy some
Hot Chicken Soup.
Grab a ladle.....
Grab some cute soup bowls because it's Soup Time.
