GREEN OLIVE CHIMICHURRI

 


Olive Chimichurri is especially delicious with it's citrus notes!
Yes, bright and green and utterly crave-worthy. Make a
double batch and you will thank me later!

Olive Chimichurri is perfect over Burrata Cheese and 
some crackers for a Yummy Yummy appetizer.

Top your Steaks, Fish, Eggs and Pasta with this Chimichurri
and I guarantee you will 
 thank me again!


Lets get started making Green Olive Chimichurri!


Start with 1 cup of green olives and buy them pitted. 
I had to pit the olives myself because I did
not read the label :)


Roughly chop the green olives into small pieces.


Tumble the olives into a large bowl.


Chop up about 1 cup of bright green parsley and then into the bowl it goes.


Chop up about 3 tablespoons of bright green Basil and add it to the bowl it goes.


Chop up about 1 cup of bright green onions and into the bowl it goes as well.


Add the juice of one bright yellow lemon to the bowl.


Mince 2 teaspoons of Garlic ( and to the bowl it goes )


Shake in 2 teaspoons of salt to the bowl.


Shake in 1/4 teaspoon into the bowl.


Shake in 1/2 teaspoon of Red Pepper Flakes or more into the bowl.


Grab your favorite Olive Oil and pour 1 cup into the bowl.


Just Pouring!


Pour 1 tablespoon of your favorite Red Wine Vinegar into the bowl.


Now give this bowl a good mix and we are not done YET.


Add half the mixture to a food processor and blend.


Last batch blended up and back into the bowl.


Green Olive Chimichurri in a bowl :)


Get the Green Olive Chimichurri out of the bowl and into
cute Mason Jars.


Two Green Olive Chimichurri jars. One is for us and one is
going to be a fun gift for our freinds.

for grilled steak, chicken, and fish. Plus it's the new
main ingredient in my pasta dishes.

BLACKBERRY PROSCIUTTO BRIE CRISTINI BITES

 


Blackberry, Prosciutto, Brie Cristini Bites are delicious 
Savory & Sweet bites.

Melted cheese over Prosciutto with a warm berry topping 
is a perfect appetizer bite!

Serve up a few with a salad and then call it
LUNCH.


Rush off to your Farmers Market and grab some
gorgeous Blackberries.


Add some honey to taste to the Blackberries.


A few drops of vanilla...


Give the Blackberries a smoosh and a mix.


On the stove top bring the Blackberries to a boil 
and then turn the heat off.


Set the Blackberry sauce aside.


Brush all the slices of Cristini with your favorite olive oil
(my favorite is by Napa Valley Olive Oil Maufactory)
and then bake them in a 350 degree oven for
about 6 minutes till slightly brown.


Perfect!


Run to the fridge and grab your Brie & Prosciutto.


I take the rind off the Brie but if you like the rind then keep it.


Slice the Brie to fit the size of the Cristini.


Place the Prosciutto on top of the Cristini.


Top the Prosciutto with the Brie and bake in the
oven at 350 degrees for about 5 minutes
or until cheese is melted.


Okay you could eat them like this but
DON'T :)


Grab a pretty platter and top the cheese with the
Blackberry sauce and a hint of Mint.


So much fun putting these bites together and 
couldn't be more Tasty!

Sweet, Savory and Crunchy in every bite.

a bowl of Ice Cream or your morning Oatmeal for sure!

LEMON RICOTTA ZUCCHINI GALETTE

 


This Lemony Galette is everything you want to brighten
up your kitchen on a beautiful Spring day!

A lemony Zucchini Galette is made with creamy three-cheese
 filling and and incredibly easy buttery pastry!

Absolutely Delicious!

While this galette look gorgeous, it requires just 15 minutes to prep.

Close your eyes, take a bite of this cheesy Galette, and you will be transported
to a cafe in France with the warm wind blowing through your hair.


Thinly slice up 2 medium zucchini and sprinkle them with salt.


Transfer the zucchini to a colander to drain for about 15 minutes.
Pat dry with a paper towel.

The key to a successful Galette is a filling that doesn't become dry
while baking. Salting the squash helps remove water
so you don't end up with a soggy crust!


For the Galette crust :)

Yes, you can go homemade if you want because it's your Galette :)


On a large piece of lightly floured parchment paper, roll the pie dough
to a 12-inch circle. Transfer parchment and dough
to a large baking sheet and then set it aside.


For Ricotta filling...

In a medium bowl add 3/4 cup of you favorite Ricotta cheese.


To the Ricotta add in...

!/2 cup of grated Parmesan cheese.
1/4 cup of shredded Mozzarella cheese.
1 clove of minced garlic.


Run outside and grab two lemons off your tree (or your neighbor's).


Zest of one whole lemon into the bowl.


The juice of one lemon right into the bowl.


Crack in one egg yolk and pour 1 tablespoon of 
olive oil into the mixture.


Little salt & pepper to taste.

I am a Pepper girl so I added a lot :)


Now WHISK away till the mixture is all combined.
Smells so Lemony right now!


Grab The Zucchini and Grab The Ricotta.


Using a spatula spread the the cheese over the dough
leaving a 1 1/2 inch border.


Top with the squash rounds in any design you like.


Ta Da!


In a small bowl whisk one egg and a tsp. of water.


Gently fold over the pasty edges, pleating as necessary.

Brush the side of the dough with the egg yolk and a
drizzle of olive oil over the top.


Bake the galette in a 400 degree oven for about 35 to 40
minutes until edges are golden brown.

My timer is set...


My Lemon Ricotta Zucchini Galette is done.


While the Galette cools for a second whip up a

Centerpiece!


Slide this Galette onto a pretty serving board 
because it's time to eat!

 Pour the Champagne Please!


This flaky crust and savory Galette can be served in a fat wedge
as a main course or in smaller slices as a first course.

Galette can also be served in thin slices as an hors d'oeuvres.

However it's served, it's sure to be enjoyed by all.


We served our Galette in a big wedge as a main course
with a side of Champagne!
