LEMON CAKE

 


This Lemon Cake recipe is fluffy, tangy and so 
easy to make from scratch!

Every bite of this supremely moist cake is busting with fresh lemon
flavor and an easy lemon glaze on top will have 
you hooked after just one bite.

My husband John said it should get an award (maybe even a plaque!) :)

Life Is What You Bake Of It!


Let's get baking!


In a medium bowl toss in 1 1/2 cups of all-purpose flour.


 To the flour add in 1 1/2 tsp of baking powder.


One Tbsp of lemon zest.


Add the lemon zest to the flour.


Sprinkle in 1/2 tsp of salt and give the bowl a mix.


Grab a large bowl and add in 1/2 cup unsalted butter at room temperature.


Pour in 1 cup of granulated sugar.


With a hand held mixer cream the butter and sugar together until
pale and fluffy. Scrape the sides of the bowl with
a Lemon Spatula as needed.


Crack in two eggs one at a time and continue to mix.


Mix the second egg into the batter.


Scrape the sides of the bowl with the Lemon Spatula again.


Pour in 1 tsp of vanilla extract.


Add the juice of one lemon into the batter, it's
Lemon Cake, right? :)


Give the bowl another mix.


 Grab the dry ingredients and pour half into the bowl
along with 1/2 cup of buttermilk, slowly mixing
it all together.


Pour the other half of the flour into the bowl.


The last mix!


Grease a 9x5-inch loaf pan with butter.


Scrape the batter into the loaf.


Smooth the batter and then off to a 350 degree oven to bake for
45-55 minutes until the cake is golden brown and
a tooth pick comes out clean.

Baking time can vary, so keep an eye on yours :)


Enjoy licking all of this while the cake is baking
because the batter is delicious!


Have a taste:)


For The Glaze....

One cup of sifted powder sugar.


1 Tbsp of milk.


The juice of one lemon goes in because it's 
a Lemon Cake, right? :)


Give the glaze a stir and set it aside.


While the cake is still cooking make a super fun
Floral Arrangement with some lemons!


Wowza this Lemon Cake is done and smells AMAZING !!!

Let the cake cool for about 1/2 hour before glazing over the top.


Glaze & Garnish


This Lemon Cake is not dry and it's so perfectly moist
while still being fluffy and keeps fresh for a few days if
.... there is a crumb left :)
