STRAWBERRY SHORTCAKE COOKIES


In case you haven't noticed, strawberry are in season now, they are
extra big, juicy and RED. By the way I love Shortcakes.

Since I am not inviting all of you over to enjoy my strawberry treats, I'm going
to share the recipe for these delightful Strawberry Shortcake Cookies
here for you to make at home.

Strawberry Shortcake Cookies are biscuit-like cookies that basically combine
a strawberry shortcake dessert into a delicious summer cookie.

You will love them just like this but wait till you see how I ate them :)


Cut up about 12oz of strawberries into 1/4-inch pieces.


To the strawberries add in 2 tbsp of sugar.


Squeeze in about 1tsp of lemon juice.


In a separate bowl tumble in 2 cups of all-purpose flour.


Whisk in 

2 tsp baking powder
1/2 tsp salt 
7 Tbsp sugar



To the bowl add in 6 Tbsp of unsalted butter, chilled and cut into
small pieces along with 2/3 cup heavy cream.


Stir until mixture is dough-like.


Add in the juicy red strawberries.


Give the bowl a mix.

Yes, have a taste because this dough is so good :)


Place tablespoon-size scoops of dough onto a parchment-lined cookie sheet.


Sprinkle cookie with coarse sugar over the top
and bake in a 375 degree oven for 16-18 minutes in the oven.


For sure enjoy this while cookies are cooking.


Cookies are done and my kitchen smells amazing!


Let them cool before you dig in. Those strawberries are HOT.


These cookies are so delicious and so summery.

But beware because they are best on the first day they're made. So you have a couple of options.

1. Invite friends over.
2 .Bring them to a BBQ or Summer Party.
3. Wrap them up pretty and give them as a gift to a friend 


Run to your fridge and grab your favorite ice cream now!
