I love theses little bundles of springtime- asparagus, prosciutto, and parmesan cheese
all wrapped in a flaky puff pastry. Perfect side dish for your Easter meal.
They are super simple and nothing complicated here!
Toss asparagus in olive oil and a sprinkle with salt and pepper.
On a lightly floured surface roll the puff pastry out to a large rectangle.
Square off the edges and cut into 4 pieces.
Grab your parmesan & proscuitto.
Place the sliced prosciutto on top of the puff pastry dough.
Followed by 3 stalks of asparagus and parmesan cheese.
Then wrap the bundles up with the puff pastry.
Make sure puff pastry overlaps some and press to seal.
Brush the puff pastry with egg wash.
Off to a 425 degree oven for about 12 minutes.
Honey Bunny your Easter side dish is ready!
Feel free to use bacon, or even deli ham in place of prosciutto if you'd like.
And if you've got a different cheese in the fridge you'd rather
use up, be my guest.
Simplicity is the name of the game, and this recipe you almost can't go wrong!
Enjoy!
P.S.
With my left over puff pastry scraps I made
cute little appetizers. :)
