MINI FUDGE PUMPKIN CHEESECAKE WITH OREO COOKIE CRUST


Fall Is In The Air....Pumpkins Please!

I had a fall dinner party and Pumpkin had to be served.
These delicious cute Mini Pumpkin Cheesecakes were perfect for a fall dessert.


Start with the Star, 1/2 cup of canned pumpkin and 8 oz of cream cheese
and beat them together.


Crack in one egg and one tablespoon sour cream.


Toss in one cup 1/2 cup of sugar and the Fall Spices

1/2 teaspoon of Cinnamon
1/8 teaspoon of Nutmeg
Pinch of Cloves


Toss in two tablespoons of flour.


Give the bowl of "Fall" a good mix.


For the crust...Crush 22 chocolate Oreo Cookies in a bowl
and add 1/2 cup of butter. Mix with a folk.


Add one round tablespoon of the moist crumb into each cheesecake space.
Use a small shot glass to press down crumbs to form crust.


Pour in your cheesecake batter and off to a 350 degree oven for 20 minutes.


Let your Mini Pumpkins cool completely on the counter.


Pop the Mini Pumpkin Cheesecake out of the pan.

Now to make it Fudgeeee!

 Dollop some of your favorite fudge sauce on top. I used just Smuckers


Garnish with crumbled Oreo Cookies.

I made my 12 Mini Cheesecakes is this mini pan.
The bottom pops right out and makes it super easy to get your dessert out.
